These are easy, cheap and taste just like the fast food restaurant with the CLOWN! I avoid the place because they have nothing healthy and I do not like clowns. Anyway, these take a little prep time, but can be put together while the burgers are on the grill. You'll be "lovin' it" clown-free. I got the original recipe from the Cincinnati Enquirer. You might want to double it if you are really hungry or craving fries!
1 1/4 tsp salt
2 large potatoes
1 tsp olive oil
Bring a pot of water to a boil. Add 1 tsp. of the salt. Preheat the oven to 400 degrees. On a cutting board, peel (if you want) the potatoes and cut lengthwise twice (so they look like thin French fries). Transfer the potatoes to the boiling water. Cook exactly 2 1/2 minutes. Drain in a colander. Set aside about 5 minutes to cool. Transfer the potatoes to a mixing bowl. Add oil and 1/2 tsp. salt. Carefully toss to coat well. Place in a single layer on a cookie sheet. Bake 20-25 minutes, turning several times while cooking. Add more salt, if desired. This will make about 2 portions.
