Crock Pot Breakfast Casserole

This couldn't be easier and taste better.  Would be great when you feel like "breakfast for dinner" or when you have a bunch of eggs that maybe just recently reached their expiration date (I won't tell).  You can add more veggies, different meat.. whatever you like.  Makes great leftovers, too.

1 pkg. frozen hash browns (I used the little cubes)
1 pkg. sausage crumbles (I used Morning Star Farm meatless sausage)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
12 eggs
1/2 cup milk
salt and pepper

Spray crock pot with Pam.  Layer 1/2 the potatoes on the bottom.  Top with 1/2 the sausage and cheeses.  Layer again.  Beat eggs, milk, salt and pepper.  Pour over top.  Cover and cook on low 6-8 hours.
